Maryam's 'Honeymoon' Chicken

Ingredient

Tesco Pre-packed Chicken Whole Leg (2 Pieces), clean and pat dry.
 
Marinade:
Salt & Coarse Ground Black Pepper
2 tsp Tesco Choice Turmeric Powder
3 tsp Oyster Sauce
2 tsp Tesco Light Soy Sauce
3 Garlic Cloves, smashed
2 Tesco Choice Dried Chillies
3 tbsp Tesco Olive Oil
2 tbsp Tesco Organic Squeezy Clear Honey
 
Vegetables:
60g Broccoli
60g Cauliflower
60g Carrot
60g Red Pepper
1.5 tbsp Tesco Olive Oil
Salt & Coarse Ground Black Pepper to taste


INSTRUCTIONS

1. In a sealable bag, marinate chicken overnight or at least 2 hours.
2. Pre-heat oven to 170 degrees.
3. Remove chicken from bag. Keep the leftover marinade for basting.
4. Roast chicken with skin side up for 20 minutes. Flip the chicken and continue to roast for another 5 minutes. 
5. Meanwhile, cut and prepare vegetables in roasting pan.
6. Baste chicken with marinade in pan for 1 minute. Place chicken on top of vegetables and roast for another 15 minutes at 130 degrees.
7. Meal is ready when the chicken achieves 74 degrees Celsius of internal temperature and the vegetables are browned.
