Pumpkin Mayo Chicken Sandwich


  • 4 wholemeal bread , toasted
  • 1 grill chicken breast, sliced
  • 2 tablespoons of pumpkin mayonnaise
  • 1 stalk celery stick, diced
  • 1/2 Japanese cucumber, sliced
  • 5 cherry tomato, sliced
    Grill chicken spices
  • 1 whole chicken breast
  • 1 tsp olive oil
  • 1/2 tsp mix herb
  • 1/4 tsp salt
    Pumpkin mayo

    Makes 1/2 cup

  • 250 gm pumpkin
  • 3 tablespoons Lady's Choice Mayonnaise
  • 1/4 tsp chilli flakes


    To make pumpkin mayo

  1. Pre heat oven to 160⁰C, roast the pumpkin for 20 mins or till soft, leave to cool.
  2. Once cool, mix in the mayonnaise and chilli flakes ( more chilli flakes for desired spiciness)

    Sandwich Steps

  1. Marinate chicken breast with all the ingredients, leave for 10 minutes.
  2. Grill the chicken breast for 10 minutes or until it is cooked, leave to cool .
  3. Slice the chicken when it is cool.
  4. Mix the celery and Lady's Choice pumpkin mayonnaise, combine well.
  5. Spread the pumpkin mayonnaise on both toast, layer with the cherry tomato, cucumber and chicken slices.
  6. Top with the remaining toast , slice and serve.
