Poh Poh 'Remember Me' Steamed Fish

Poh Poh, who doesn’t get to see her grandkids very often, prepares a special dish that she hopes will make them remember her, and look forward to meeting her.

Fish Preparation

  • 800-900g Tesco Dragon Tiger Grouper (alternatively, use Siakap)
  • Salt to taste
  • 1 strip Tesco Eat Fresh spring onion
  • 3 slices Young ginger
  • 10g Goji berries (rinsed)
  • 4 pcs Tesco Choice red dates (deseeded and sliced)
  • 1 bottle Tesco essence of chicken
  • 4 tsp Tesco light soy sauce

  • 4 tbsp Tesco cooking oil
  • 50g Young ginger (thinly sliced)
  • 4 pcs Shallots (sliced)
  • 10g Tesco Eat Fresh red chilies (deseeded and thinly sliced)
  • 5g Tesco Eat Fresh spring onion (thinly sliced)

  1. Rub salt on the Dragon Tiger Grouper. Insert spring onion and slices of young ginger into the fish’s stomach.
  2. Steam for 5 minutes on boiling water, then discard water from the fish. Bring the fish back to the steamer plate.
  3. Place the goji berries and slices of red dates on top of the fish. Then, gently pour a bottle of Tesco Essence of Chicken over the fish and add the soy sauce.
  4. Steam the fish for another 5 minutes. Turn off the heat and cover it.
  5. In the meantime, fry the thinly sliced young ginger until golden and crispy and set it aside. Then, fry the shallots.
  6. Take the cover off the fish and garnish with fried ginger, shallots, chilies, and spring onion
  7. Serve it while it’s hot for best results.
