David & Amy’s ‘Bonding’ Cupcake

David, a busy working father spends his weekend (making up for lost time) by baking cupcakes with his 10-year-old daughter Amy for his family and close friends


* Recipe makes approximately 12 cupcakes

  • 120g Tesco Choice Enriched Wheat Flour (sifted)
  • 40g Cocoa powder (sifted)
  • 135g Tesco Fine Granulated Sugar 1kg
  • 2 tsp Baking powder (sifted)
  • ½ tsp Vanilla essence
  • 80g Tesco Margarine or Unsalted Butter
  • 2 whole eggs – lightly beaten
  • ½ cup of Tesco fresh milk 1L
  • 2 tsp Tesco Gold Freeze Dried Coffee (sifted)
  • 4 tbsp Dairy sweetened whipped cream

  • Dairy sweetened whipped cream (Chilled)
  • 1 Kiwi
  • 80g Tesco Eat Fresh Strawberry Cameron
  • 30g Blueberries
  • 3 Mini tangerine


  1. Preheat oven to 180°C (160°C fan-forced). Line cupcake tins or tray with baking cases or cups.
  2. Using a mixer, cream margerine, caster sugar and vanilla essence until creamy and fluffy.
  3. Gradually add eggs and mix until fully blended.
  4. Add flour, melted chocolate and baking powder. Pour in fresh milk into creamed mixture. Beat until smooth.
  5. Spoon mixture into liners until each case is one-third full. Bake for 15-20 minutes.
  6. Once the cupcakes have cooled, apply chilled whipped cream on top of cupcake.
  7. Add slices of desired fruits on whipped cream and enjoy.
